150 g rice flour
85 g cornstarch
100 g of sugar
30 g agave syrup
1 tsp chia seeds
2 tsp spices
1 tsp baking soda
125 g neutral oil
1 good pinch of salt
Mix all the ingredients and make a ball. Leave to rest in the refrigerator for 1/2 hour.
Take 2 sheets of baking paper, place the ball between the two and spread the dough with a rolling pin (or by hand, pressing and spreading little by little).
Remove the top sheet and place it on a baking tray.
Preheat to 180 degrees and cut out pieces with a cookie cutter.
Cook for 12 minutes.

40 g of tapioca (or a glass of each)
40 g cornstarch
40 g of rice flour
40 g of margarine (or oil I would say)
40 g of sugar
and same spices as above
Cook also for a dozen minutes at 180 degrees.
